I have two electrical outlets in what used to be a tile backsplash that I am replacing with drywall (on an island with a ledge across one side). I have removed and am to remount the electrical boxes to accommodate the thicker butcher block countertop I am installing. Are there any guidelines for how to mount the electrical box so that it will extend through the drywall the correct distance? I know there are adjustment screws on the box, but how should I mount the box prior to adjusting - should I set it back 1/4", 1/2", go for flush...

You should go for close to flush. You don't want to be proud (sticking out) or your plate won't sit right later. You can also find box extenders that slip inside the old box, bringing it out to the new surface.
