I have a family room with all wood paneling which I really do not care for. My husband tried to pry it off to see what is underneath and there is sheet rock, however, when it was put up we believe they used glue. Is there a way to paint paneling so it will look like a smooth wall? The other option is too expensive right now - meaning, tear down the paneling & sheet rock and redo the entire room. Thank you in advance.

You can prime and paint, leaving the grooves showing. Many people like this look. You'll need to sand and prime before filling the grooves anyway, so do that. Then let it alone for a few weeks to see if you like the look.
As for filling the grooves - how the end result looks depends on the beholder. It may be aceptable to you. If you are picky, you will hate it.
