I know it may not be neccesary but will two coats of primer in any way hurt or help a paint (interior satin latex) finish?

With a satin finish, I would go with the second coat of primer.

On bare wood we sometimes do 2 coats of primer. First one seals the wood, then comes wood filler for nail holes etc. and caulk, followed by 2nd prime coat. It's a little more work but the difference can be visible. depends how critical your eye is. Some pure whites don't completely cover without this step.
