I am working on turning my 3-car garage into an apartment (see garages) but I have run into my first issue.

The studs are not 16" on center as I am accustom. Instead, they range from 13 1/2" to 17".

Now I can jam the insulation in there and stretch it al little but when I go to hang the drywall won't I have trouble?

As long as there is, or you can put, a stud at every 48" (or 96" if you're hanging horizontally), then you should be ok as far as seems go. You'll just have to measure each space as you go and mark your drywall accordingly, so you know where to drive the screws.

You will be fine with 17". Anything over that you may want to consider 5/8" drywall. It will turn out straighter.
