I have stripped off all the old coats of white gloss paint from my victorian fireplace down to the original 'black' metal.
How should I finish off the job? Is there a special 'blacking' finish or any other material which will give it it's original finish?

Suggestions:
Many woodstove and fireplace supply stores stock Stove-Bright Stove paint.
Many hardware stores stock High-temperature Engine enamel.
If the original coating was porcelain, it's possible to have it reporcelained, but not in an "installed" state.
Both porcelain and ceramic tile paints exist, but they may not serve your need.
