I made some small shelves for inside my kitchen cabinets and painted them with Rustoleum oil-based paint. After a week they still have a paint odor. I would like to remove this odor as soon as possible.
Can they be cured by putting them in an oven at some certain temperature for some period of time?

What is done is done. You can't 'remove' odor from paint. It will eventually dissipate.

Nope. You might try setting them outside, or in a garage, but if its cold and/or damp, this will actually delay the curing. Try putting a fan on them for a while.
