Hello,
I am purchasing a professional style range top with 4 15K burners and an 18K grill. The manufacturer recommends a pro style hood with external blower (due to grill.) Is there a reason why a 1000 CFM internal blower would not suffice? Why External vs. Internal for a grill? Also, these use 10" round duct. Would converting to 3x10 duct work, or will it not draw properly?

Id check code there first . See what they say. A 10" pipe will not fit in a 3 1/4"X 10" wall stack They only should take a 6" pipe is all at a 100 cfm. I see in the book a vent fan in line in the cabinet calls for a 1/2 hp at 1055 cfm at a SP of .375 needs a 36"X12 1/2" duct. A 14" roof fan neeed about a 18" round.I d check aroud a lot on what you need there. Dont forget the swing out water line by the stove there . Saves a lot of steps.
