The white finish on these has turned an off yellow. Any help in brightening?

As for brightening, go over a small section with Turtle Wax Polishing Compound and Scratch Remover. Many times the color change is right on the surface. Using the compound (which actually removes a miniscule portion of the finish) usually will restore the original color - it can't hurt to try.
This type of finish (lacquer) can be antiqued. Putting a faux finish such as a wood grain on is something not for teh fait of heart, and best left to a professional.
Having said that, if you can lay your hands on a copy of Bob Flexner's book, "Understanding Wood Finishing" he covers the subject (as well as others) quite well.
