I just purchased a used kitchen table (7ft x 2 1/2 ft looks like a big bench) which I believe to be pine for $15!!! Pays to shop 2nd hand until you see what you want!
Anyway, the top has a DEEP hole/gauge in it which needs to be filled and it does need to be lightly sanded.
My ?, I once heard that a traditional poly coat could not be used on a kitchen table, that the chemicals can seep into food that is laying on top (I have toddlers). Is this true and would anyone know of what sealer I would use?

You're not the first (and you won't be teh last) to voice this concern. Many people read the warnings on the cans of various finishes and decide they are unsafe - not true.
ALL finishes can be harmful BEFORE THEY SET UP.
To the best of my knowledge, there is no finish available on the retail market that is harmful after it has cured. Check the product you anticipate using for time to cure.
