Second project: I want to paint an unfinished poplar bench. What should I use to seal the wood before I paint it white, just in case I change my mind later and want to remove the paint & use stain instead?

I'd use shellac as a sealer. It's a good clear finish with excellent stain-blocking properties, and will keep the paint from penetrating the wood.
