I am getting ready to stain brand new oak stairs/railing and paneled doors. I would like to keep a very natural light wood color and look to the wood but want to protect it. what are your suggestions? and should I condition the wood first? Thank you

If you want to keep the natural look, why not just polyeurthane it. I would recommend a oil based polyeurthane.
No, you do not have to use wood conditioner on oak. Just sand well, remove all dust, go over it with a tack rag and apply the finish.
