Have some Minwax spar varnish, can I mix this
with paint thinner and use it as a wipe on varnish.....

In a word, yes.
Wipe on varnishes or 'long oil' varnishes as they're sometimes called, simply have a higher percentage of solvents and oil than resin - they're 'long' on oil.
Any varnish can be made into a wipe on finish by thinning it.
I would suggest Naphtha instead of paint thinner, however. It will speed the drying time.
