I've just finished stripping the dark finish from an old buffet because I liked the design, and underneath found beautiful quarter sawn oak. This piece is evidently from the turn of the century Art & Crarfts period. What type of finish should I use on it? I don't want anything shiny. Would oil work? I always use oil on my Danish teak.

That's one of the fun parts of refinishing - finding something totally unexpected underneath the finish you don't want!
Oil will certainly work, although my preference would be a satin varnish. You're probably already aware of this, but for other readers I'll spell it out - oil finishes don't fill the grain - and quarter sawn oak has a more dominant grain pattern than flat sawn, as you know. The varnish will fill the grain, and the sheen doesn't have to be shiny.
Of course, if you like the feel of the wood and don't mind the open grain, an oil finish would be fine - it is, after all, your piece!
