I have a Wolf oven that over heats. If I set it for,say 250 degrees, the burner flame will go off, then within 10-15 seconds, light back up for a short time, then go off. The actual oven temperature then goes up and up. It will go to 450-500 degrees if I don't shut it off. It has a standing pilot. The oven has not been used for several years. The sensing bulb and wire seem intact inside the oven. Any ideas? Thanks.

Hello Dave K and Welcome to the Do It Yourself Web Site and my Gas Appliances topic.
Two Choices. Either remove the thermostat first and bring it with you, along with the model and serial numbers, to the local appliance part store or take the info to the sote, buy the thermostat and replace it after purchasing it.
My suggestion would be to buy T-Stat first. Than remove the existing one noting exactly how it comes out. Than install the new one exactly as the existing one is presently installed.
Be very careful with the new T-Stat's temp sensor element. On roll it carefully and installing it carefully. The tube extention must not be bent, kinked or damaged during installation. T-Stat is a non refundable part and is not an inexpensive item.
