I need to remove my gas range in order to redo the flooring underneath. The gas connection has a shut off valve and some metal flex hose. Can I simply shut the valve off and remove the stove and then leave it like that for a week or so while I repair the floor or should I have a plumber cap the line (or should I cap it myself)?

Do exactly as you described. Turn off the gas at the shut off valve. Than unscrew the flex connector at the shut off valve. As long as the shut off valve remains turned off, no need to do anything else. Can remain that way until all work is completed and flex line reinstalled as it is now. Than turn valve back on and use soapy water to check for a leak at the reconnection point.
