My GE gas oven (basic model) won't always turn off when the control is set to "off". Maybe unrelated but a thermometer indicates a much higher temp in the oven than the setting. What do I need to replace?

May not need to replace any part, depending upon the type of ignition system installed on that model. Need more detailed and specific information to try to determine the cause and provide a solution.
What type of ignition system?
Constant burning pilot light?
Or glowing hot surface ignition?
Higher than set temperature usually indicated the thermostat is defective or needs a calibration. Oven thermostat calibration is not a do it yourself task.
Thermostat may or may not be the cause of the oven not turning off when turned to off. Nor may it be the only reason the oven temp is higher than the set temperature. Need far more specific details on both issues to try to determine the causes of both.
