I am about to install a pine tongue and groove cathedral ceing in my new addition. Before installing, I'd like to know if there are any materials I may need to put up over the insulation to prevent heat loss and to make a vapor barrier but not cause to condensate? (ex. Tyvek, tar paper)

For a cathedral ceiling, the only vapor barrier/vapor reatarder that should be installed is the paper facing on fiberglass insulation that will be oriented toward the heated living space.
In other words, paper side DOWN.
Only other concern is to make sure you maintain proper airflow from your rafters to your ridge oir other approved vents.
Personally, my suggestion would be to frame the ceiling with scissors trusses to make sure there was enough ventilation and insulation space.
