I just purchased a 20 yr old house with sprayed ceilings. What is the best method of removal to make a slick finish on the ceilings?

By sprayed you mean pop corn right?? If you do then get a garden sprayer. One that you fill with water, pump up and spray. Get the ceiling wet. You will know when it is ready when all the white has turned grey. Then scrape off with a six inch knife. Do small sections at a time. If the ceiling has ever been painted then it might take a little more work. After all the texture is off then sand everything with a pole sander. Then you will have to put a coat of mud on all the seams and screw holes. Sand that and you should be good to go.
