I am installing family-room recessed lights;10 line-voltage cans.
dimmer controlled.
I need an EFFICIENT yet simple dimmer that wont gobble up too much power.
each light takes a 75W bulb; 10 x75W = 750W MAX.
what kind of dimmer should I use?

All modern dimmers use a triac which takes only a few percent of the power fed to the light. For 750 watts, you'll need to buy a 1000-watt dimmer (most dimmers are only rated for 600 watts). Install it in a single-gang box with no other switches or devices in it. It'll still get pretty warm.
