I'm installing a ceiling fan. The box on the ceiling has black, white, copper and red wires. The fan has black, white, green and blue. The instructions indicate the blue is hot power for optional light kit. I'm not including an optional light kit. Should I connect as follows; black to black, white to white, green to copper, and do nothing with the blue and red?

Go ahead and connect the blue to the red anyway. This way you'll be ready if you decide to add a light kit in the future. You need to electrically isolate that red wire anyway, so connecting it to the blue will serve that purpose too.
