What length of sole plates should I use if I need to frame
16, 20, and 40 foot walls?

Depends on if you're doing this alone or with help. You can buy lumber up to 20ft usually, but if you're going at this alone I would build 8 ft sections and tie them together, just remember not to put the cap plate seems directly over the top plate seems. If you have (alot) of help, you COULD build two 20ft sections for the 40 footer, one for the 20 footer, and one for the 16 footer, but as I said theres nothing wrong with building in sections, just keep the seems apart(usually half a board length is what I do) on the two top plates.
