I have old, old, kitchen cabinets, they are laminate with the fake dark wood look. Can these be painted?

Yes. Clean them, scuff them, prime them, and paint away.

What kind of paint do I use? Would it be better to use a roller on the door fronts or a paint brush? Could you tell me what kind of results I can expect?

I would use an oil-based primer for better adhesion.
I use a roller (4" mohair) for the cabinet doors, rolling it on and brushing it smooth before dry (right away after rolling).
The results will be a combination of the cabinets condition, type of paint used, and your painting skills. :D

The cabinets condition are great, I can get good paint, but uh oh on the painting skills!! :o
