Why would you want / need to do that?
Laminates are disposable floors. Once they are scratched, pull it up and throw it away!
Laminates are made so nothing sticks to the surface, for ease of cleaning dirt & grime.
That same surface makes refinishing futal.

I was curious about putting it on a new laminate floor after it had just been installed. I really like the shine of polyurethane, kinda like the old gymnasium floors at school plus i wondered if it would help protect the laminate floor

Contact the laminate company and see if it effects the warranty in any way.
Contact the poly finish company and see what or if they will warranty that surface and the product should the finish fail. You can't sand it!! Will they replace it at no cost to you?
