I have just had new red oak flooring put in.
How many coats of polyurethane on average is reasonable, and what exactly is gained by adding additional?

Depends...
Oil or water based???
Oil 2 coats
water based 2-5 coats depending on the depth you wish to acheive. More then 2 coats, usually cost more. If you want more then 2 coats, expect an upcharge, if you are hiring it out.
