When cutting notches in posts to connect your beam (say (2) 2x10s) is it better to cut one 3" deep notch from 1 side and place the 2 boards in nailed together. Or is it better to cut a 1.5" notch on each side of the 6x6. I have done it both ways and wondered if one method was superior to the other....

I never do it that way. (I set 4X6 beams on top of 4X4 posts and use Simpson BC4's to tie them together.) But, to answer your question, I would notch both sides of the posts 1-1/2" deep, then through bolt the 2X10's to them. Then at 2 equally spaced points between each post, I would block between the 2X10's

Whats the verdict on notching out the post in a "U" shape and placing the beams in that notch?? I've read that this is a strong way to do it and also helps prevent "rolling"???

That would work too. Or, just cut the posts off and rest the 2X's on top of them with a Simpson BCS to connect things. A BCS is only a dollar or two. All that notching involves hours and a lot of through bolts.
