I just moved in to a new house and I'm working on setting up the entertainment center. I'd like to install the two rear speakers of my surround sound setup with a nice clean look.

Add "Run the wires through the attic/crawlspace" to your list and my answer would be "Whatever is easiest."

I wouldn't try snaking through the walls - with 16" centered studs, you're just asking for trouble.
I would say a combination of under the carpet/behind the baseboard. Typically, you can pull the edge of the carpet up, and have a little room to stuff wires under the baseboards. Stick the carpet back down and the wire is hidden and secured.
However, running through an attic or crawlspace would definitely be a better option. But, if you don't have that option, go for the option above.
BTW, if you have to cross a doorway or stray from the baseboard under the carpet, keep the wire between the carpet and padding - NOT under the padding. This will tend to insulate and pad the wires on both sides - which keeps it from being damaged.
