I'm painting my walls then I'm sanding my floors afterwards. What's a good curing time for the paint before I start sanding my floors?

Do you mean dry? If you mean cure latex over plaster takes 30 days to cure. But you certainly don't need to wait that long. If your concern is the dust etc. I would wait 8-12 hours max.

Give it 24 hours. Better safe than sorry.
