I was reading in the Stone Basics and it says to lay Marble on Wood sublfoors reinforced witha secondary layer of plywood or for a more durable application, a mortar bed. What is this and what would be the steps to doing this is I have just the subfloor?

A mortar bed is a still functional but old school method of underlayment for a tile or stone floor. More modern methods are isolation membranes and cementous backer units (Durock, Hardiebacker, etc..)

If you are installing a stone floor it is important to have a very stiff floor. What are the size, span and spacing of your floor joists?

The size is probably about 8 or 9' and a small gap in-between but I can see the bottom of the ground thru them.
