What type of water/moisture sensor could I add to my DSC 832 system? Could I add to to an existing zone - I am currently maxed out on zones with current system?

Well, that would depend on whether you need wireless, or if you can wire the sensor to the panel:
<b>Hardwired</b>
GRI makes a hardwired <a href="http://www.grisk.com/specialty/water_sensor2800.htm">Surface Mount Water Sensor</a> (model #2800) that could be wired into the panel very easily - comes in NO (2800) or NC (2600) contacts.
<b>Wireless</b>
I don't believe DSC makes a wireless Water Sensor for their systems, but I may be wrong. Even if they do, you would have to have the Wireless Receiver to go with it. Rather than adding a Wireless Receiver (unless you already have one), I would recommend using <a href="http://safewatchservice.com/catalog/product_info.php/products_id/439">ITI's Quik Bridge Receiver</a> and an <a href="http://safewatchservice.com/catalog/product_info.php/products_id/480">ITI 60-744-95R Water Sensor</a>. You could get both of them for about $80-100 online, depending on who you buy from.
Basically, what you would do is wire the Receiver into the panel (just like a hardwire zone is wired in) and the panel would have no idea that that zone is actually wireless. The transmitter would signal the receiver and it would open/close the zone accordingly (you can use NO or NC contact closures.)
Technically, you could wire the water sensor in with another zone, but unless you have other environmental sensors, I wouldn't recommend it. DSC also makes a zone expander for their systems - you may want to look into that.
