We have hung the drywall and started taping, we have a couple round corners instead of square corners. The metal bead has been hung but can't get the mud to stick to the round part of the corner. I was wondering if you are suppose to just mud up to where is starts to round??? not sure what to do??

Yep you got it. Mud to where the round starts. Don't put any on the round itself. You will get some on there so sand it down smooth in your sanding stage.
