We would like to make some 5" x 5" red oak table legs, can anyone tell me how to laminate the oak together to get this size and what type of glue to use?

You can use standard 1 x 6 oak, it is actuall 3/4 inch thick.
Laminate it by using yellow wood glue and as many clamps as you can clamp on. It will take seven 3/4 inch boards to achieve a 5 inch thickness. A power planer will even them up to your desired size real nice.
All this hardwood will be expensive. You could probably do a google search and find 4 x 4 oak quite a bit cheaper.

Or build a hollow box with 4/4. Miter the corners if you want to preserve the 'look' of a solid piece.
