I'm going to remove a wood stove. How do I go about patching up the round hole in the roof and the ceiling?

Hello Eric and welcome aboard.
Kind of need a bit more info to really help you out.
First, how big of a hole is this? Is there a chimney or just a flue pipe to deal with at the roofline? What kind of roof is this, roofing material & pitch will determine how to correctly patch this so it's water tight.
As for the inside, I'm thinking this must be at least a 6" hole, you'll have to patch it in with drywall to get an acceptable looking result. Take a look at the links on this page here on the site
