I need to take off approximately 1/16" or so on the latch side of solid wood doors. In the summertime the humidity makes them rub. I really don't trust myself with a hand jack plane. Can I use orbital sander and finish up by hand or should I use a belt sander? i am thinking that that belt sander may be too agressive for this task.

Use the tool that makes you comfortable. An orbital sander with some 60 grit paper ought to combine aggressiveness with control. Then you could finish as you will.
