I've got to cut 18 2" diameter wheels for a crafting project. I'll be using my drill press with available speeds of 700, 1500 or 3000.
The 1" wood will either be a soft pine or wood crating material.
I'm leaning toward the 700 speed but would like some input. Thanks!

You're probably correct at the 700 rpm.
The larger thebit or attachment the slower the speed to be used.
You using a hole saw in the dp??

probably better to use a circle cutter..
also, even if you're running at a slow speed make sure you clamp down the work piece and pull the hole saw or circle cutter bit out of the wood occassionally to let the tool cool.. otherwise you'll burn it up...
