Seeing all this fire destruction in California I am thinking about building/having built a small room or large locker type thing that is fireproof. Seems it could be built in my garage or laundry room from bricks but wonder what kind of door would be reasonably fireproof.

You can purchase a steel fire-rated door. These are becoming more common in residential construction as code requirement for a connected garage so I would not be surprised if they were available from your local home center. Otherwise, contact a commercial builders hardware company. There are different ratings depending on how long they can resist a fire.
Depending on what you are protecting and how much space you need, there are also fire rated cabinets and safes available also.
