Is there an easy way to "cut/split" batts of insulation to go around existing wiring other than just tearing it apart by hand?

Same way you cut it to length. Put a board on the paper side (if you have one), step on the board, cut through the compressed insulation with a utility knife. If you only need a cut part way, only cut part way. If the slit is exposed after the insualtion is in place use tape to close the slit and keep the vapor barrier intact.
