I need to make a custom hardwood floor reducer where I will cut a 5" bevel on a 6"x2" (basically making a wedge). Since table saws have maximum cut depths of about 3 to 4", how would this be done?

Just bevel it with a jack plane.

I actually like using hand tools and I was looking for an excuse to buy the Veritas 5 1/4 Bench plane. Is it practical to bevel 20 feet of this in hard maple?

You will develop a keen ability to sharpen a plane.

I don't see why not. You are going to need a sturdy place to mount this while you plane it. An awful lot of wood got worked before power tools. Maple has a good tight grain. If the irregularities in the wood don't get you down, you should be fine.

Reducer is to transistion from hardwood to tile or carpet. They only make these for a maximum 3/4" drop since that is the max thickness of standard hardwood flooring. Since I installed over slab + 3/4" plywood, my total rise is about 1" over my tile and therefore I need a custom reducer. I need 20 feet because there is a lot of tile which ajoins the hardwood (kitchen and family room are shared).

A thickness planer with a jig to tilt the wood to the desired angle will make short work of this.
