This weekend I noticed that the amount of airflow coming out of the A/C ducts was very low. I only noticed this once before (about a month ago). I checked the evaporator and found it to be almost completely covered with ice. The intake air filter was replaced about one week ago, so that is definitely not the problem. Also, after shutting the unit down for a few hours it ran fine all night. Any ideas?

Get your freon level checked. That usually happens when freon levels are low, or when the system needs cleaning.
