I am redoing part of my interior walls, and was wondering if it would hurt anything to put a layer of plastic sheeting over the paper backed insulation.

Paper back or not we put up a 2 mil poly V/B on the ceiling and walls. Let it cover any windows if we can till done with the dry wall. It helps keep the windows clean till trim out;) ED

This works well in SOME parts of the country. If, however, you were to do it in Houston, TX or some other places with a combination of HIGH HUMIDITY, and NOT REAL EXTREMES of average temperature, you could have a SICK house in a few years. Those walls need to breath, so a "breathable" barrier is a much better choice, IMHO.
