Painting - Winter White vs Pickled Oak to cover graying pine?

We are building a new house and one of the ceilings is going to be tongue and groove pine that we want to have a light white stain effect. But some of the boards have weathered very gray and some are clear. Do you know if Winter White stain by MixWax would cover the gray better than Pickled Oak by WinWax?

I have used pickled oak on some T-111 and it sunk in a lot so I can't really tell how it will look on the tongue and groove. I haven't see the Winter White used anywhere yet. What I have left over for Pickled Oak seems to not want to stir up well now, so I have to buy new stain and want to do it correctly the first time.

Or maybe you have some other product you would recommend insead of either of these two. If there is something that is not as drippy, blends the gray better into the clear wood, but still shows the grain of the wood, that would be great!
