I can take down the bad stuff and clean up the bad seams. But, filling in the area and re-texturing is a league above me.

Well, if you are asking for help, it would be helpful to us if we knew for sure if the vaults are plaster. Are they over wood lath? metal lath? gypsum lath? How large are the areas? How wide are the cracks? Is this in a church? How high are the areas involved? I know how to fix it and I know how to texture it. Maybe you need to hire me. Where are you?

Just a guess here but... You have acoustic texture on your ceilings, right?
