The facing of the brick on our chimney has been cracking and crumbling (from freezing and thawing) for several years. We need to repair it before it all falls down. The style of brick (white 10" modular smooth 100) is no longer made(or so we've been told), so we would need to replace with a similar brick. Another option we have been given is to cover the chimney with stucco. Is this a good option and is this a do-it-yourself project?

What you have now should be repaired before considering a stucco application. Basically a poor substrate will create problems for a new application, wasting more time and money.
I would suggest a professional to do this as it may be more involved than you trying to do it.
