I recently discovered extensive rot under my home. Is there a product that will stop the rot so I can leave the affected floor joists in place and just strap a new one along side to increase support?

The rot is likely caused by excessive moisture, or a leak, and/or termites, etc.
You need to correct the cause before trying to repair the damage, or it will just eventually occur again.
You may be able to sister pressure-treated joists beside the old joists, if they aren't too far gone.
I would have it inspected for termites by a licensed pest control operater, and for structural integrity by a licensed contractor.
If it has active termite infestation, I would remove all infested wood and do the repairs, and then have it professionally treated.
