When nailing (or screwing) new sheetrock on top of old sheetrock, is it ok to just attach to the old sheetrock, or should i go through os and nail to the studs? the old sheetrock is very stable and in great shape, just too much dried adhesive to clean up for paiinting.

You want to go through the old drywall and attach the new drywall to the studs. The old board will not provide enough strength or stability for new board.
