I have cracked plaster walls in my loft and have heard that there is a finish/technique called Tuscany in which you use drywall mud, I need more info, has anyone heard of this process?

I don't know what tuscany is, but if it's with mud, then there's a good chance with a name like tuscany it's just a skip trowel texture.
