At one of our locations we have a garage. There used to be a swamp cooler on the roof, vented straight down into the garage. I was wondering if there was a way to mount a Window AC unit in the ceiling? Any advise would be most helpful! Thank you

No.
If you try to duct the airflow to have it change direction you will frreze up the coil on a regular basis.
The fan and motor in window units are not capable of being ducted.
Maybe you could find a deal on a Coleman camper a/c unit.
