I have had a leak in my roof that has damaged the ceilings in the upper hallway of my house. We punched holes in the ceiling to allow the water to escape before it brought the entire ceiling down. We have had the roof repaired, but would like to know how repair the damage to the ceiling. It is drywall covered in a "stucco" paint. The water has leaked through the light fixture and from around the attic entrance, as well as from two places outside of the bathroom. Is there anything I can use to fill the holes and paint over, or should the ceiling drywall be replaced?

If the ceiling got so wet that you were concerned about it coming down, replace it, and the insulation above it. Both are probably ruined.

Tear it out and start over. Better safe than sorry down the road. This is bread and butter work for my company.
