80 year old house with oak wood trim
In bathroom, I stripped 3 coats of paint off woodwork around the door, around window and medicine chest. It looks good. Some stain color remains so I may do more sanding to take off the old stain. Question - How best to seal the wood and protect from dampness (being in the bathroom). Just put Polyeurothane on?

If you are going to stain, polyurethane varnish would be good. Paint provides its own protection and needs nothing else. Semi-gloss is a good choice in the bath.
Good ventilation is important, too.
