I am painting with an Interior Sation Enamel and this morning after a day of drying I noticed that in some spots there are smooth areas and then in other areas you can see blotches in certain locations. Am I rolling too thick in spots, or uneven in areas? Who can I prevent this from happening in the future.

Are you painting over primer?
Are the blotches areas where the paint seems not to have covered or are discolored?
If the paint seems not to have covered and the old finish is showing, then perhaps the coverage was too thin. As you paint, look across the paint to see if the sheen is uniform. It will be beyond a certain amount of coverage. There will be some waviness to the wet surface, but the sheen should be uniform.
Sometimes an alternative light source can help you keep an eye on the eveness of the coverage.
