Alrighty, by now, my lovely little forget-me-nots are spent and I've harvested the stems with the seeds on them. I just clipped them, leaving some of the plant. My question is - will the plant produce more flowers later in the season now that I've dead-headed it, or is that all it will do and I should just pull it up?

I don't know which Forget-me-not you have, but
Myosotis sylvatica , blooms early so it may repeat in your location after dead heading. Annual flowers performance can vary a lot by locale and care.
